How To Make Zucchini Lasaga

Farmer Dude here. So what do you do with all this darn zucchini? I made it into a zucchini lasagna. I’m going to make my own sauce. You can buy it, but I’m going to make mine.

Start with:

Onions.

About a hamburger.

A place that’s cumin.

Italian seasoning.

Paprika.

Garlic (a couple cloves).

Salt and pepper to taste.

Quarter tomatoes.

Now here’s the tricky part. You have to cook this down until most of the moisture has gone out of it. You can also add mushrooms if you’d like.

So I’ve cut my zucchini about an eighth inch thick, quarter inch thick, and I layer that down. That’s the first thing I do. Then we’re going to give it a little layer of sauce. Then we’re going to give it a layer of cheese. I use parmesan and mozzarella. So I’ll put parmesan in the middle and start all over again. And this is the last layer of cheese. This will be on top. I’m going to put it in the oven at 375 for about 35 minutes.

So the proof is in the pudding. I have to taste it. OMG. That’s good.
